Ingredients

  • 4 cups whole milk
  • 0.25 cup unsweetened cocoa powder
  • 2 tablespoons granulated sugar
  • 0.125 teaspoon kosher salt
  • 6 ounces semisweet chocolate finely chopped
  • 1 teaspoon vanilla extract
  • 0.5 cup bourbon

Equipment

  • 1 3-quart saucepan

Method

  1. Whisk the milk, cocoa powder, sugar, and salt together in a 3-quart saucepan over medium heat for 5 to 7 minutes, until steaming with small bubbles around the edges; do not let it boil.
  2. Reduce the heat to low, add the chocolate, and stir for 2 to 3 minutes, until completely melted and smooth.
  3. Remove the saucepan from the heat and stir in the vanilla and bourbon.
  4. Divide among four mugs and serve warm.

Notes

For the smoothest texture, keep the milk mixture below a boil. Refrigerate leftovers for up to 3 days; freezing is not recommended. For a dairy-free version, use unsweetened oat milk and dairy-free semisweet chocolate.
