Ingredients

For the salmon
  • 1.5 lb salmon skin-on, cut into 4 pieces
  • 1 tsp neutral oil
  • 0.25 tsp black pepper
For the glaze
  • 0.25 cup soy sauce
  • 0.25 cup honey
  • 1 tbsp rice vinegar
  • 2 tbsp water
  • 1 tsp cornstarch
  • 2 cloves garlic minced
  • 1 tsp fresh ginger finely grated

Equipment

  • 1 rimmed baking sheet

Method

Bake the salmon
  1. Heat the oven to 425°F.
  2. Line a rimmed baking sheet with foil.
  3. Arrange the salmon skin-side down on the baking sheet, rub the tops with the oil, and season with the black pepper.
  4. Bake for 10–14 minutes, until the thickest part of each fillet reaches 145°F.
Make the glaze
  1. While the salmon bakes, whisk the water and cornstarch together in a small bowl until smooth.
  2. Combine the soy sauce, honey, rice vinegar, garlic, and ginger in a small saucepan.
  3. Bring to a simmer over medium heat.
  4. Whisk in the cornstarch mixture and cook for 1–2 minutes, until glossy and lightly thickened.
Glaze and serve
  1. Brush the warm glaze over the salmon.
  2. Serve any remaining glaze on the side.

Notes

For the best glaze texture, whisk the cornstarch mixture in smoothly. Refrigerate leftovers for up to 3 days; freezing is suitable. For a gluten-free option, use gluten-free tamari in place of soy sauce.
