Ingredients

  • 1.5 lb Yukon Gold potatoes cut into 3/4-inch pieces
  • 1 yellow onion medium, cut into 1/2-inch pieces
  • 2 tbsp olive oil
  • 0.5 cup chicken broth
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 0.5 tsp paprika
  • 1 package (14 oz) smoked sausage cut into 1/2-inch slices
  • 12 oz fresh green beans trimmed and cut into 2-inch pieces

Equipment

  • 1 9x13-inch baking dish

Method

  1. Heat the oven to 400°F.
  2. Lightly grease a 9x13-inch baking dish with olive oil.
  3. Toss the potatoes and onion with the olive oil, kosher salt, black pepper, garlic powder, and paprika in the baking dish.
  4. Pour the chicken broth evenly over the vegetables and cover tightly with foil.
  5. Bake for 25 minutes.
  6. Remove the dish from the oven and stir in the smoked sausage and green beans.
  7. Cover again and bake for 20 minutes.
  8. Uncover and bake for 10 to 15 minutes, until the potatoes are fork-tender and the green beans are tender.

Notes

Cut the potatoes into evenly sized pieces so they cook at the same rate. Refrigerate leftovers for up to 4 days; freezing is not recommended because the potatoes and green beans can soften. For a gluten-free version, check that the smoked sausage and chicken broth are labeled gluten-free.
